My Simple Double Chocolate Chip Cookie Recipe

With this method it couldn't be easier to make the perfect cookie. The recipe is versatile too, I didn't have enough chocolate chips when making this batch so I threw in 2 handfuls of marshmallows to bulk it up and it added a great gooey texture. Self-raising flour isn't typically used in cookies but I think it's a great touch. The recipe can easily be multiplied to make more, or you can freeze it if you only want to make a few cookies at once. 

Ingredients:
  • 100g softened butter
  • 150g soft brown sugar
  • 1 egg
  • 150g self-raising flour
  • 40g cocoa powder
  • 150g chocolate chips
Method:

  1. Pre-heat oven to 180°C (fan).
  2. Cream the softened butter in with the sugar.
  3. Beat in the egg.
  4. Mix in the flour and cocoa powder.
  5. Stir in the chocolate chips.
  6. Put baking paper onto 2 trays.
  7. Spoon onto tray in small measures (this recipe makes 12).
  8. Cook for 12 minutes.
  9. Let them sit for 10 minutes before removing from tray.
  10. Enjoy!
