With this method it couldn't be easier to make the perfect cookie. The recipe is versatile too, I didn't have enough chocolate chips when making this batch so I threw in 2 handfuls of marshmallows to bulk it up and it added a great gooey texture. Self-raising flour isn't typically used in cookies but I think it's a great touch. The recipe can easily be multiplied to make more, or you can freeze it if you only want to make a few cookies at once.
- 100g softened butter
- 150g soft brown sugar
- 1 egg
- 150g self-raising flour
- 40g cocoa powder
- 150g chocolate chips
Method:
- Pre-heat oven to 180°C (fan).
- Cream the softened butter in with the sugar.
- Beat in the egg.
- Mix in the flour and cocoa powder.
- Stir in the chocolate chips.
- Put baking paper onto 2 trays.
- Spoon onto tray in small measures (this recipe makes 12).
- Cook for 12 minutes.
- Let them sit for 10 minutes before removing from tray.
- Enjoy!
